Production areas
There are many traditional areas of olive and olive oil production in Greece. Some of them, however, are exceptionally traditional and their oils the most authentic. These are designated as either PDO or PGI by the EU
PDO
-
This designation is given to those foodstuffs, which have their entire production cycle (from raw material to bottled/packaged product) tied to a specific, renowned geographical region. The combination of natural factors (climate, altitude, etc.) and people (the production process and its tradition) make the product unique and it cannot be emulated. These rules are closely upheld to attain the highest possible quality.
PGI
-
This designation is awarded to products that have any part of the production process tied to a specific region
